Mixed Greens With Roasted Butternut Squash, Spicy Pecans & Pear Gorgonzola Vinaigrette
Nothing says “fall” like a flavorful butternut squash. Put away the traditional recipes and place this tasty salad recipe in your rotation. Start by cutting the squash in half, peeling and removing all of the seeds. Cut the squash into half-inch cubes and place them on a roasting pan. Bake until the squash is fork-tender. In a hurry? Place your squash in the microwave for up to 10 minutes for all of the flavor in half of the time. To serve, layer some mixed greens, the roasted butternut squash, spicy pecans, dried cranberries and blue cheese crumbles. Finish off with a delicious pear gorgonzola vinaigrette. This crisp fall salad serves as a perfect lunch or complementary side.
Potato-Cabbage Casserole
Serve up some comfort this season with this potato and cabbage casserole. Begin by slicing peeled potatoes and place them in a medium-sized stockpot. Fill with cold water and bring to a boil. Turn heat down and simmer until potatoes are fork-tender. While potatoes are cooking, shred your cabbage and onions. Add to a medium pan with oil and sauté until tender. Season with salt, pepper and caraway. Next, rub a baking dish with butter and place a third of drained potatoes on the bottom of the dish. Layer with horseradish, the cabbage mixture and cream. Repeat these layers twice. Top off with remaining butter and bake.
Roasted Sweet Potato Salad
Is it really fall without sweet potatoes? This roasted sweet potato recipe brings maximum flavor together with minimal effort. Start by preheating the oven. Place the potatoes in a roasting pan and roast until tender. While your potatoes are cooling, combine your favorite honey mustard dressing with some red bell pepper, green onions, garlic and hazelnuts. Toss in the potatoes and season with salt and black pepper. Finish by refrigerating until you’re ready to dig in.
