Black Bean Salad

Ingredients
  • 2 Cans 15 oz. each Black beans, drained, rinsed
  • 1 Cans 11 oz. Whole kernel corn, drained
  • 1/2 C. Mayonnaise or salad dressing
  • 1/2 C. Green pepper strips
  • 1/2 C. Red onion sliced
  • 2 Tbs. Fresh cilantro or parsley chopped
  • 2 Tbs. Lime juice
  • 1 Clove Garlic minced
  • 1/2 Tsp. Ground cumin
  • 1/2 Tsp. Salt optional
  • 1/4 Tsp. Ground red pepper
  • 2 Tomatoes chopped
Directions
  1. Mix all ingredients in large bowl. Refrigerate several hours or overnight.
