Caribbean Quinoa Salad with Spicy Jerk Dressing with Hemp Seed
Ingredients
- 1/2 C. Red Quinoa cooked
- 1 oz. Radishes thin sliced
- 1 oz. Scallions thin sliced
- 2 oz. Brussels’ Sprouts shaved
- 2 T. Italian Parsley rough chopped
- 1 T. Fresh Mint rough chopped
- 2 oz. Carrot matchsticks
- 4 oz. Pineapple large dice, ½ in.
- 4 oz. Mango firm cut large dice, ½ in.
- 1 T. Extra Virgin Olive Oil
- Salt & Pepper to taste
- 4-6 oz. Spicy Jerk Dressing with Hemp Seed
