Microwavable Recipes to Make Back-To-School a Breeze
August 25, 2020 – Although back-to-school may look different this school year, one thing will always remain true – a kid still has to eat! Take the stress out of weekly meal prepping by whipping up some easy and delicious meals that can be made from the convenience of your microwave. Here is a collection of some super-speedy options that can be used as an afterschool snack, a ready-to-go lunch or even a weekday dinner.
Microwave Barbecue Meatloaf
Take it easy with this quick dinner favorite that your whole family will be able to enjoy in just minutes! Begin by combining your ground beef, finely chopped onion, breadcrumbs, an egg, salt, dried basil leaves pepper and half of the barbeque sauce. Press into an even layer in a greased microwave-safe loaf pan; spread the other half of the barbecue sauce on top. Cover with a paper towel and microwave on high until cooked through. Serve after resting for five minutes.
Tortilla Roll-Ups
These tortilla roll-ups make for a perfect school lunch or after-school snack. Start by bringing together salad dressing and salsa and spreading on tortilla. Top with meat, cheese and lettuce and roll it up. Enjoy it hot by preparing the same way, omitting lettuce. Wrap each tortilla in a paper towel. Microwave each tortilla on HIGH for about a minute or until thoroughly heated.
Sesame Ginger Chicken Salad
Spice up your school night with an exotic salad that takes minutes to make. Begin by seasoning your chicken breasts with salt, pepper and your choice of sesame ginger dressing and sauce and thoroughly cooking in the microwave. While your chicken is resting, bring together lettuce, mandarin oranges and almonds, tossing lightly with remaining sesame ginger dressing and sauce. Finish by topping with sliced chicken breasts. Sprinkle with additional almonds or chow mein noodles for garnish.
