Pork Loin with Sweet and Hot Mustard Glaze

Ingredients
- 2-1/2 to 3 lbs. pork loin boneless
- 3 jars Sweet and Hot Mustard
- 3 tbsp. cider vinegar
- 2 tbsp. soy sauce
Directions

To prepare a marinade, combine 1 jar of Sweet and Hot Mustard, cider vinegar and soy sauce. Place meat in a large plastic bag and cover with marinade. Marinate at least 2 hours, turning occasionally.

Remove meat from marinade and dry well. Discard marinade. Season with salt and black pepper. Heat heavy pan with oil until very hot. Sear meat and brown on all sides. Once browned, glaze with remaining Sweet and Hot Mustard.

Place in oven at 375 degrees and re-glaze every 15 minutes. Roast for 45 minutes or until 160 degrees internal temperature. Let rest 15 minutes before slicing. Serve with roasted glazed sweet potatoes and steamed broccoli.
