Spice up your salad with Cajun chicken
Take your salad to the next level with Cajun chicken and bleu cheese dressing. This salad is also a great way to hit most of your major food groups with just one meal. It’s as easy as it gets to make and only takes about 15 minutes including prep time.
Here’s what you need:
- 2 boneless chicken breasts
- ½ Cup black olives
- ¼ Cup red bell pepper
- 1 onion
- 1 tomato
- Chow Mein noodles
- Shredded romaine lettuce
- Cajun seasoning (to taste)
- Chunky bleu cheese dressing
First, heat a small bit of olive oil in a pan. Next, season each side of your chicken breasts with as much Cajun seasoning as you like and rub it in so it sticks. Once the oil and the pan are both nice and warm, place your chicken breasts in the pan and cook each side for 5-6 minutes, or until cooked throughout. Remove the chicken from the pan and set aside to cool. You can also use the precooked frozen chicken strips if you’re looking to save some time.
While the chicken is cooling, place washed and dried romaine lettuce on a plate and top with red bell pepper, olives, onion rings, diced tomato and Chow Mein noodles. The great part about this recipe is that all of these measurements and ingredients are simply guidelines. You can use as much or as little of each of these ingredients as you like.
After assembling your salad, the chicken should be cooled enough to cut into strips and place on top. Dress all of this with some chunky bleu cheese dressing and you’re set to enjoy this tasty treat!
