June 8, 2020 – Temperatures are rising both outside and in the kitchen! Embrace the summer heat with three recipes that are low maintenance enough for a hot summer day, but still pack a spicy punch. New to spicy food? Start with the Caribbean Fiesta Salad and work your tolerance up the Chorizo Stuffed Jalapeños.
Caribbean Fiesta Salad
This salad is perfect for a light summer dinner with just the right amount of heat. In a large bowl, combine crabmeat, cooked shrimp, romaine lettuce, arugula, cherry tomatoes, red and yellow peppers, and mushrooms. Chicken & Sausage Creole
This Chicken & Sausage Creole dish is just as easy as it is fiery! Start by browning chicken and sausage in hot oil. Add celery, green peppers, onion, garlic, chili flakes and Creole seasoning, cook for about two minutes. Deglaze with chicken broth and reduce by half. Add in diced tomatoes and marinara, letting the flavors come together for about five minutes. Season to taste, adding in Worcestershire sauce and hot sauce to meet your level of heat. Chorizo Stuffed Jalapeños
Heat up any summer soiree with this spicy appetizer. Begin by carefully removing the seeds and pulp of the jalapeños peppers. In a large bowl, combine fully cooked chorizo sausage, red peppers, breadcrumbs and a store-bought cheddar cheese sauce. Stuff each pepper with about 2-3 tablespoons of the filling, and bake.
