Recipe: Jamaican Jerked Chicken

20-oz. Romaine lettuce, chopped
10-oz. Roma tomatoes, julienne
Avocado, sliced Fresh baby spinach leaves, cleaned and dried
5-oz. Carrots, julienne
5-oz. Red onions, thinly sliced
Papaya, cubed
20-oz. Precooked jerked or spicychicken breast, sliced
1 bottle (15-oz.) Your favorite balsamic vinaigrette
5-oz. Passion fruit juice, concentrate
2-oz. Green onion, finely chopped 
3-oz. Fried coconut chips

Plate romaine lettuce and top with remaining vegetables, papaya and chicken.  In a separate bowl, combine balsamic vinaigrette and passion fruit concentrate.  Drizzle over salad.  Garnish with green onions and coconut chips.
