Ingredients
Dressing
- 1/2 C. Lemon yogurt
- 1/2 C. Fat-free salad dressing or mayonnaise
- 1 Tsp. Grated lemon peel
- 1/2 Tsp. Curry powder
- In a small bowl combine all ingredients, whisking until smooth. Set aside.
Salad
- 3 C. Cooked brown rice
- 2 C. Cooked turkey diced
- 1/2 C. Celery diagonally sliced
- 1/2 C. Pineapple tidbits drained
- 1/4 C. Mandarin oranges drained
- 1/4 C. red currants
- 1/4 C. Scallions thinly sliced
- 6 Lettuce leaves
Directions

Combine all ingredients except lettuce leaves in a large bowl.

Pour dressing over all, tossing to coat well.

Cover and refrigerate.

Line 6 plates with lettuce leaves. Divide salad evenly among plates.
