Cajun Chicken Salad
Take your salad to the next level with Cajun chicken and bleu cheese dressing. This salad is also a great way to hit most of your major food groups with just one meal. It’s as easy as it gets to make and only takes about 15 minutes including prep time.

Ingredients
- 2 Boneless chicken breasts
- ½ C. Black olives
- ¼ C. Red bell pepper
- 1 Lg. Onion cut crosswise into rings
- 1 Lg. Tomato sliced
- Chow Mein noodles
- Romaine or green leaf lettuce shredded
- Cajun seasoning to taste
- Blue Cheese or Chunky Blue Cheese Dressing
Directions

Sprinkle Cajun seasoning onto boneless chicken breasts. Grill or broil until done. Put lettuce on salad plates. Top with olives, red peppers, tomatoes, onions and Chow Mein noodles. Slice chicken into thin strips and place on top of salads. Top with Blue Cheese dressing.
