A Valentine’s Surprise: it’s not chocolate, it’s gingerbread!
It’s that time of year again. Time to start stressing out about what you’re going to do for your significant other on Valentine’s Day. How big do you go? Do you make dinner or go out? What are they going to do for you? What if you do a lot and they don’t do much for you? Especially if this is your first Valentine’s Day together, it can be tough to decide on a gift. Problem solved. With this sweet treat you’re sure to beat the Valentine’s stress.
Here’s the recipe:
A box of Gingerbread Cake Mix (usually requires water and eggs)
- 1 8oz package of cream cheese
- 1 Cup of coleslaw dressing
- 1 Cup of powdered sugar
- 4 Tablespoons of lemon juice
- Zest from 1 lemon
- 4 tablespoons of half and half milk
The first thing you need to do is get your cake going. So just follow the recipe on the back of the box and get that into the oven.
Then, start preparing your lemon cream cheese sauce. Mix together the cream cheese, coleslaw dressing, powdered sugar, lemon juice, lemon zest and half and half. Make sure your cream cheese is extremely soft and DO NOT try to soften it more in the microwave….that was a big mistake on my part. Also, make sure that you use an electric mixer to get your sauce nice and creamy. I tried using a spatula and it just didn’t cream the right way.
Definitely serve this dish warm if you can. The gingerbread is absolutely amazing with the cream cheese sauce. You can also give it some more Valentine’s flare by adding red food coloring to the sauce and throwing on some heart shaped sprinkles.
While this isn’t the traditional chocolatey explosion you get on Valentine’s Day, it won’t be a letdown. My boyfriend typically scoffs at anything that isn’t coated in chocolate, but even he was going back for seconds of this cake!
