Welcome to the Island Life: Hawaiian Chicken Salad
Looking for a recipe to transport you to a tropical island? This Hawaiian Chicken Salad will make you wish you were sitting on the beach with your feet in the sand. Ingredients and instructions are simple. Here’s what you need:
- 2 ½ C diced cooked chicken
- 1 C (20 oz) pineapple tidbits, drained
- 1 C seedless red grapes, halved
- ¾ C celery
- 1 C naval orange segments (or mandarin oranges)
- 1 C poppyseed dressing
- ¾ C sliced bananas
- ½ C pecan halves/pieces
First, cook your chicken. I just did a light salt and pepper seasoning on each side and cooked them over a pan on medium heat. You can also use frozen precooked chicken and just heat it up.
Once your chicken is cooked, dice it into bite sized cubes and add it to a large bowl with the drained pineapple, halved grapes, sliced celery and orange pieces. Mix and add the poppyseed dressing. Refrigerate for 3 to 4 hours.
Just before you’re ready to serve, top the mixture with bananas and pecans. This is best served on a bed of lettuce or with crackers.
Another great thing about this recipe is that you can add any of your favorite fruits to make it even better!
