Recipe: Tuscan Green Beans
1/2 Lb. Green beans, stems removed
1 C. Fennel, sliced thin
1 C. Carrots, julienned
1 C. Red pepper, sliced thin
2 Tbsp. Pine nuts
1 bottle Your favorite Italian dressing
Bring 1 quart of water to boil, add beans and cook 3 minutes. Drain and rinse immediately under cold water until cool. Drain and set aside. Combine remaining ingredients with your favorite Italian dressing. Add green beans and serve.
Serve warm or at room temperature with vegetables or crackers.
