Terra Cotta Grilled Chicken Salad

Servings 6 servings


  • 1 C. Grilled chicken breast sliced into 1/2-inch strips
  • 3/4 C. Mild chili pepper thinly sliced
  • 3/4 C. Red onion thinly sliced
  • 3/4 C. Tomato diced
  • 3/4 C. Cooked beans kidney, pinto or black beans
  • 3/4 C. Jicama diced
  • 1 Tbs. Fresh cilantro minced
  • 1 C. Ranch style creamy salad dressing
  • 1 Tbs. Catsup
  • Dash Salt
  • Dash Hot sauce
  • Juice of 1 lime
  • Cilantro Sprigs for garnish if desired


  1. In a large bowl, combine chicken, mild chili, red onion, tomato, beans, jicama and minced cilantro; add lime juice and toss to mix thoroughly.
  2. In a small bowl, mix together Ranch style creamy salad dressing, catsup, salt and hot sauce. Pour over salad ingredients, tossing to coat thoroughly. If desired, garnish with cilantro sprigs.
