Tuscan Green Beans

Servings 4 Servings


  • 1/2 Lb. Green beans stems removed
  • 1 C. Fennel sliced thin
  • 1 C. Carrots julienned
  • 1 C. Red pepper sliced thin
  • 2 Tbsp. Pine nuts
  • 1 bottle Your favorite Italian dressing


  1. Bring 1 quart of water to boil, add beans and cook 3 minutes. Drain and rinse immediately under cold water until cool. Drain and set aside. Combine remaining ingredients with your favorite Italian dressing. Add green beans and serve.
  2. Serve warm or at room temperature with vegetables or crackers.
