Jamaican Jerked Chicken

Ingredients

  • 20- oz. Romaine lettuce chopped
  • 10- oz. Roma tomatoes julienne
  • Avocado sliced Fresh baby spinach leaves, cleaned and dried
  • 5- oz. Carrots julienne
  • 5- oz. Red onions thinly sliced
  • Papaya cubed
  • 20- oz. Precooked jerked or spicychicken breast sliced
  • 1 bottle 15-oz. Your favorite balsamic vinaigrette
  • 5- oz. Passion fruit juice concentrate
  • 2- oz. Green onion finely chopped
  • 3- oz. Fried coconut chips

Directions

  1. Plate romaine lettuce and top with remaining vegetables, papaya and chicken.
  2. In a separate bowl, combine balsamic vinaigrette and passion fruit concentrate. Drizzle over salad. Garnish with green onions and coconut chips.
