Slow Cooker Spinach and Artichoke Dip

Ingredients

  • 1 c. - Mayonnaise
  • 1 c. - shredded parmesan cheese
  • 1 9 oz. package - frozen chopped spinach, thawed and dried with paper towels
  • 1 14 oz. can - artichoke hearts, drained and chopped
  • 1/2 c. - red bell pepper chopped
  • 1/4 c. - Pepper Jack cheese
  • Bagel chips or other hearty chip for serving

Directions

  1. SPRAY bowl of 1 to 2 ½ quart slow cooker with cooking spray.
  2. MIX mayonnaise and parmesan cheese in a medium bowl.
  3. Add artichoke hearts, spinach and bell pepper, mix well. SPOON mixture into slow cooker. Sprinkle with Pepper Jack cheese.
  4. COVER and cook on low heat setting for 1 hour or until cheese is melted.
