Sunburst Turkey and Rice Salad

Ingredients

Dressing

  • 1/2 C. Lemon yogurt
  • 1/2 C. Fat-free salad dressing or mayonnaise
  • 1 Tsp. Grated lemon peel
  • 1/2 Tsp. Curry powder
  • In a small bowl combine all ingredients, whisking until smooth. Set aside.

Salad

  • 3 C. Cooked brown rice
  • 2 C. Cooked turkey diced
  • 1/2 C. Celery diagonally sliced
  • 1/2 C. Pineapple tidbits drained
  • 1/4 C. Mandarin oranges drained
  • 1/4 C. red currants
  • 1/4 C. Scallions thinly sliced
  • 6 Lettuce leaves

Directions

  1. Combine all ingredients except lettuce leaves in a large bowl. 

  2. Pour dressing over all, tossing to coat well. 

  3. Cover and refrigerate. 

  4. Line 6 plates with lettuce leaves. Divide salad evenly among plates.
