Mediterranean Tuna Salad

Servings 8 servings

Ingredients

  • 3 Cans 6 1/2 oz. Water packed tuna, drained and flaked
  • 1/2 Lb. Low-fat dill Havarti cheese cut into 1/2-inch cubes
  • 1/2 C. Pitted black olives thinly sliced
  • 2 8 oz. packages Fusilli or Bow Tie Pasta cooked according to package directions
  • 1 C. Thinly sliced scallions including green tops
  • 1 C. Finely chopped red and/or green peppers
  • Zest from 1 lemon
  • 1 bottle 8 oz. Italian salad dressing
  • Black pitted olives for garnish

Directions

  1. Combine all ingredients in a large bowl. 

  2. Toss to combine. Let stand for 15 minutes. 

  3. Garnish with olives, if desired.
