Caesar Tortellini Salad with Chickpeas

Servings 4 servings


  • 9 Oz. Package Tortellini
  • 15 Oz. Can Chickpeas drained
  • 1 C. Carrots julienned
  • 1 C. Celery finely sliced
  • 1 C. Red peppers finely sliced
  • 1/4 C. Pine nuts
  • 1/3 C. Fresh parsley
  • 1 Bottle Caesar dressing


  1. Cook tortellini according to package directions, drain and cool in strainer under cold running water. Set aside to drain. 

  2. Combine all ingredients with one bottle of your favorite Caesar dressing. Toss with tortellini and serve.
