Bring 2-1/4 cups water to boil. Add rice; cook as directed on package.
Place pork in large bowl. Add combined marmalade, horseradish sauce and dressing mix; toss to coat.
Heat oil in large nonstick skillet on medium-high heat. Add pork mixture; cook and stir 10 to 15 minutes or until pork is evenly browned. Reduce heat to medium-low. Add snow peas and water chestnuts; mix lightly. Cover; cook an additional 5 to 7 minutes or until peas are crisp-tender, stirring occasionally. Serve over hot rice.
