Roasted Sweet Potato Salad


  • 3 C. Sweet potatoes peeled and diced
  • 3/4 C. Honey Mustard Dressing
  • 3/4 C. Red bell pepper chopped
  • 1/4 C. Green onions chopped
  • 1 tsp. Minced garlic
  • 1/4 C. Hazelnuts chopped and toasted
  • Salt and ground black pepper to taste


  1. Preheat oven to 350 degrees F. Place potatoes in a roasting pan and roast for 15 minutes until tender; cool. In a large bowl, mix Honey Mustard Dressing, red bell pepper, green onions, garlic and hazelnuts. Add the potatoes and season with salt and black pepper. Refrigerate until ready to serve.
