Tuscan Bites


  • 4 C. diced zucchini ¼ inch dice
  • 3/4 C. diced red peppers ¼ inch dice
  • 1/2 C. diced red onion
  • 1 C. kidney beans rinsed and drained
  • 1/4 C. cilantro paste or freshly chopped cilantro
  • 7.5 oz. light Italian salad dressing
  • 1 Bag baked corn chip scoops


  1. Blend diced zucchini, red pepper, red onion and drained kidney beans in a zipper storage bag.

  2. Combine cilantro and light Italian Salad Dressing and whisk well.
  3. Pour contents into bag with veggies. Close bag. Blend.
  4. Suggest one portion – 1 Tbsp. Per scoop. Tuscan Bite veggie mix stores well refrigerated up to 3 full days in bag.
