Hawaiian Chicken Salad

Ingredients

  • 2 1/2 cups diced cooked chicken
  • 1 cup 20 ounces pineapple tidbits, drained
  • 1 cup seedless red grapes halved
  • 3/4 cup sliced celery
  • 1 cup navel orange segments or 1cup mandarin oranges, drained
  • 1 cup poppy seed dressing
  • 3/4 cup sliced bananas
  • 1/2 cup pecan halves

Directions

  1. In a bowl, combine first 5 ingredients.   

  2. Pour poppy seed dressing over ingredients and stir. 

  3. Cover & refrigerate for 3-4 hours.
  4. Just before serving add bananas and sprinkle with pecan halves.
  5. Serve on lettuce leaf with crackers. 

    * May also us melons and other fresh fruit with or without the chicken and celery.
