Cajun Chicken Salad

  • 2 Boneless chicken breasts
  • ½ C. Black olives
  • ¼ C. Red bell pepper
  • 1 Lg. Onion cut crosswise into rings
  • 1 Lg. Tomato sliced
  • Chow Mein noodles
  • Romaine or green leaf lettuce shredded
  • Cajun seasoning to taste
  • Blue Cheese or Chunky Blue Cheese Dressing


  1. Sprinkle Cajun seasoning onto boneless chicken breasts. Grill or broil until done. Put lettuce on salad plates. Top with olives, red peppers, tomatoes, onions and Chow Mein noodles. Slice chicken into thin strips and place on top of salads. Top with Blue Cheese dressing.
