Tex-Mex Breakfast Scramble

Ingredients

  • 2 C. Cholesterol-free egg product
  • 1 C. Low fat cottage cheese
  • 1 C. Chopped green pepper
  • ½ C. Chopped onion
  • ½ C. Shredded reduced fat mild cheddar cheese
  • ½ C. Your favorite chunky salsa

Directions

  1. Beat egg product and cottage cheese in small bowl with wire whisk until well blended.
  2. Spray medium nonstick skillet with cooking spray. Add green pepper and onion; cook on medium high heat 2 to 4 minutes or until tender, stirring occasionally. Add egg product mixture and cheddar cheese. Reduce heat to medium.
  3. Cook 8 to 10 minutes or until set, stirring frequently. Serve topped with salsa.
