Salad a Day Contest Winner -- Recipe: Southwestern Chicken Tortilla Salad

Ingredients

  • 1 head Romaine lettuce chopped
  • 2 C. coleslaw mix shredded cabbage, red cabbage and carrots
  • 1/4 C. chopped cilantro leaves
  • 1 red or yellow bell pepper julienned
  • 1/2 C. jicama peeled and julienned
  • 2 rotisserie deli chicken breast halves, skinned and julienned
  • 3/4 C. prepared honey mustard salad dressing
  • seeded and minced chipotles packed in adobo sauce, to taste
  • 1-1/2 C.s tortilla strips or tortilla chips
  • 1/3 C. shredded Cotija or Parmesan cheese

Directions

  1. In large salad bowl, combine romaine, coleslaw mix, cilantro, bell pepper, jicama, and chicken.
  2. Combine honey mustard salad dressing and chipotle.
  3. Pour over salad; tossing to mix.
  4. Add tortilla strips (or chips); toss lightly. Sprinkle with cheese.
