Sunburst Turkey and Rice Salad


1/2 C. Lemon yogurt
1/2 C. Fat-free salad dressing or mayonnaise
1 Tsp. Grated lemon peel
1/2 Tsp. Curry powder
     In a small bowl, combine all ingredients, whisking until smooth. Set aside.


3 C. Cooked brown rice
2 C. Cooked turkey, diced
1/2 C. Celery, diagonally sliced
1/2 C. Pineapple tidbits, drained
1/4 C. Mandarin oranges, drained
1/4 C. Water chestnuts, drained and thinly sliced
1/4 C. Scallions, thinly sliced
1/4 C. Chopped California walnuts
6 Lettuce leaves

Combine all ingredients except lettuce leaves in a large bowl. Pour dressing over all, tossing to coat well. Cover and refrigerate. Line 6 plates with lettuce leaves. Divide salad evenly among plates.
