Caesar Tortellini Salad with Chickpeas
9 Oz. Package Tortellini
15 Oz. Can Chickpeas, drained
1 C. Carrots, julienned
1 C. Celery, finely sliced
1 C. Red peppers, finely sliced
1/4 C. Pine nuts
1/3 C. Fresh parsley
1 Bottle Caesar dressing
Cook tortellini according to package directions, drain and cool in strainer under cold running water. Set aside to drain. Combine all ingredients with one bottle of your favorite Caesar dressing. Toss with tortellini and serve.
