Black Bean Salad

2 Cans (15 oz. each) Black beans, drained, rinsed
1 Can (11 oz.) Whole kernel corn, drained
1/2 C. Mayonnaise or salad dressing
1/2 C. Green pepper strips
1/2 C. Red onion, sliced
2 Tbs. Fresh cilantro (or parsley), chopped
2 Tbs. Lime juice
1 Clove Garlic, minced
1/2 Tsp. Ground cumin
1/2 Tsp. Salt (optional)
1/4 Tsp. Ground red pepper

Mix all ingredients in large bowl. Refrigerate several hours or overnight.

Yield: 8 Servings.
