Comfort Soups for the Winter
Let it snow, let it snow, let it snow! Cold weather filled with rushing winds can feel never-ending. If you’re stuck inside your home or just need something to keep you warm this winter try these flavorful steaming hot soups. They’ll be sure to warm up those cool winter days.
Sit by the fireplace with your favorite book and enjoy a cup of Roasted Mushroom and Fennel Soup with Ranch Cream. Begin by preheating your oven to 400 degrees. Then, spread the cut mushrooms, onions, fennel, garlic and thyme onto a large baking sheet. Before seasoning your vegetables with salt and pepper, sprinkle pieces of butter and drizzle olive oil over them. Once mushrooms and fennel are caramelized, transfer the vegetable combination into a large pot with chicken stock. After the mixture has reached a boil uncover and bring to a simmer. Next, remove pot from the heat and puree your mixture to a smooth texture. When your mixture has been pureed, pour in heavy cream and simmer for another five minutes. As the soup simmers, take a separate mixing bowl to combine your dressing, sour cream and chopped chives. In the cup of your choice, garnish each serving with ranch sour cream and chives.
